Cabernet Sauvignon was the wine with which Taylors [a.k.a. Wakefield] initially made such an immense impression on Aussie winelovers. It was hugely popular back in the day and there is no reason that it should not continue to be so, when they are making wines of this quality at giveaway prices. The fruit comes from their own Clare Valley vineyards, as well as growers based on the Limestone Coast, with whom they have had a long, working relationship. Fermentation in their old 'Potter' fermenters with some parcels enjoying extended time on skins for tannin management. Then a year in an even split of two and three-year-old barrels, all French. Bright purple. The flavours weave through cassis, chocolate, licorice, dry herbs and mulberries - a wine chock full of flavour. The structure is of a rich, ripe, even plush style and notes of truffles emerge on the palate. Good acidity, balance, length and finishing with firm tannins. If you prefer to cellar it, the wine has at least a decade to go. Drink: 2021-2031. Score - 92. (Ken Gargett, winepilot.com, Dec. 2021)
