The governo technique dates back about 300 years and is rarely used today. It involves setting aside select grapes during the harvest, which are dried and pressed. Their unfermented juice is added to the young wine, restarting the fermentation process and creating greater depth, complexity and character. This wine has all that, plus ripe dark fruit and chocolate tones.[Luca Maroni tasting note not available.] Score - 99. (lucamaroni.com, Sept. 3, 2024)
