'Graticcio' is the term for the traditional bamboo racks used for air-drying grapes after the harvest; a technique that concentrates the flavours in the grapes and allows for the creation of more concentrated, robust wines. Tommasi partially dries the grapes for this wine and partially ages the wine itself in oak casks, creating a lovely balance of intensity and casual elegance. Sip with salumi.
